At the heart of this joint-effort lay the desire to celebrate all different forms and tastes of chocolate. Here, Carl Marletti decided to embrace contrasting flavours from around the globe to deliver a unique and daring proposition where citrus fruit meets oriental spices. With its shortcrust pastry base, Marletti’s ‘Tarte Sichuan’ is a winning combination of chocolate and Sichuan pepper ganache and orange parfait, topped with orange suprêmes. 1719’s organic Pineau des Charentes 2003 serves as the perfect complement to Marletti’s unusual blend of flavours, with its finely balanced spirituous body, the result of freshly pressed grapes and Cognac eau-de-vie matured in oak casks. 1719’s Pineau des Charentes 2003 has been crafted according to the traditional Cognac techniques and has been certified 100% organic, having been made purely out of organically grown ingredients. It compliments Carl Marletti’s ‘Tarte Sichuan’ fantastically, by providing a sweet note to the natural bitterness of the chocolate and orange and enhancing its fruity flavours.
The five day anniversary event attracted over 120,000 visitors. A worldwide media favourite, the Salon du Chocolat has become a key event for both the general public and professionals alike.
