The grape variety planted in our vineyard is Ugni Blanc, a late maturing variety that should be harvested at the end of October.
The harvest usually starts when the grapes are ripe. Growers are using harvesting machines which gently shake the vine, without damaging it, to make the bunches of grapes fall.
The grapes are then pressed to extract the juice. After three weeks of fermentation, the resulting wine is acid, not very aromatic and low in alcohol content; it is then going to be distilled.
